Abby Caudle-Patton (she/her) is a Registered Dietitian who is deeply passionate about empowering her clients on their nutrition journey.
Abby derives profound fulfillment from forming meaningful counseling relationships with her clients. She’s been working as a private practice dietitian since 2022, and she joined Ruby Oak in 2023. She has extensive training and experience in both disordered and gut health, and she’s extremely knowledgeable about how these two things often go hand-in-hand. Abby is our team’s go-to expert for all things gut health, from in-depth SIBO protocols to managing IBS symptoms. She excels at bringing an evidence-based, weight-neutral, non-diet perspective to a space (gut health) that’s dominated by fad diets, expensive and unnecessary supplement protocols, and a whole lot of junk science.
Prior to becoming a Registered Dietitian, Abby served as a Therapeutic Assistant at Veritas Collaborative, an eating disorder hospital in Durham, North Carolina. In this role, she provided crucial support for children and adolescents aged 9-18 at various levels of care, including inpatient, acute residential, and partial hospitalization. Her role included therapeutic conversation, meal support and supervision, leading goal setting groups, assisting patients with hygiene tasks, and ensuring milieu safety. This experience deepened her passion and understanding of the complexities of eating disorders, reinforcing her commitment to holistic and empathetic treatment.
Abby’s interest in dietetics was sparked during her first semester at North Carolina State University, where she graduated with a degree in Applied Nutrition Studies. Driven by her passion for health, well-being, and individualized care, Abby pursued advanced studies in dietetics at Meredith College, earning her master’s degree. Abby completed her clinical training at Wayne Memorial Hospital and interned at here at Ruby Oak Nutrition.
Beyond her professional life, Abby finds solace in mindfulness walks, yoga sessions, and the occasional game of tennis. She is an avid reader, particularly drawn to mystery novels, and cherishes quality time spent with her husband and sons. Abby’s home is shared with two delightful dogs, Whiskey the Chocolate Lab, and Gibson the Miniature Schnauzer.

What people say about Abby
"She is incredibly kind, personable, knowledgeable and trauma-informed."
I had the best experience with Ruby Oak! Working with Abby has been nothing short of an amazing experience. She is incredibly kind, personable, knowledgeable and trauma-informed. From the very first session, I felt right at ease and comfortable with her to open up about my ED past and find ways to improve my well-being through nutrition without diets or focusing on weight-loss. Working with Abby has been instrumental in helping me heal my relationship with food and my body. I also really enjoy the newsletters from Ruby Oak’s founder. I cannot recommend this practice enough and say enough good things about my experience.
"Their passion for Heath at Every Size and individualized care is clear, and the practice as a whole is an invaluable resource in the area."
Abby and Serena have been wonderful collaborators for client care! As a therapist, ensuring I have strong support from dietitians is essential to making sure my clients are getting the best care, and they have both gone above and beyond to make sure collaboration is a priority. Their passion for Heath at Every Size and individualized care is clear, and the practice as a whole is an invaluable resource in the area. Highly recommend!

"I feel tremendously lucky to have found Ruby Oak and to work with their great team."
Ruby Oak was my first experience in working with a trauma-informed therapist, Abby, and where I started to work on my ED. Abby worked with me to start the healing process of ED through education and compassion. I feel tremendously lucky to have found Ruby Oak and to work with their great team. Thank you!
